That was intentional.

Rather than opening with an oversized menu simply to offer more choices, Chef Brian Massa and the Fish Hawk’s kitchen team wanted to start with a focused selection of dishes we could execute consistently and be proud to put in front of every guest. At Fish Hawk’s, our goal has always been quality over quantity.

As a Dewey Beach restaurant, we also wanted something even more valuable before expanding our menu: feedback from the people actually eating here.

And you’ve given us plenty.

A Small Menu With a Purpose

Our kitchen isn’t interested in filling a menu with dishes just to make it look bigger. We believe fewer dishes done exceptionally well will always beat dozens of options that are simply good enough.

That means paying attention to the details—fresh ingredients, thoughtful preparation, proper technique, sauces and components made with purpose, and food prepared by a kitchen team that genuinely cares about what leaves the pass.

Whether it’s our crab dip, charcuterie, flatbreads, Ozzy’s Special, or one of our rotating features, the philosophy remains the same:

Fresh ingredients. Craft food. Done right.

It’s an approach we think matters when you have so many great restaurants in Dewey Beach to choose from.

But Yes… The Menu Is Growing

Now that we’ve had time to listen to our guests, watch what people order, and learn what they’d like to see next, Chef Brian and the kitchen team are preparing the next evolution of the Fish Hawk’s menu.

Expect entrées, seasonal offerings, more choices for guests who may not be looking for seafood, and new dishes built around the same standards we’ve had from day one.

We’re not interested in adding something simply because we need another item on the page. No cheesesteaks, burgers, or chicken tenders here. Don’t get us wrong, we all LOVE these things and the restaurants that make them; however, they don’t have a home here.

When we develop menu items, they must pass muster. The Chefs, the owners, and the team must be behind it or it doesn’t make the cut. Basically, if it doesn’t earn its place on the menu, it doesn’t go on the menu.

That’s why we’re taking our time.

Built by a Kitchen Team, Not a Factory

Behind every plate is a kitchen team prepping, tasting, adjusting, and figuring out how to make each dish better while still being able to deliver it consistently during a busy service.

Chef Brian brings a professional culinary background to the Fish Hawk’s kitchen, but creating and executing this menu is a team effort. Our cooks are the people who ultimately have to deliver these dishes night after night, and their work is a major part of what has allowed us to begin expanding with confidence.

The goal isn’t to have the largest menu in Dewey Beach. It’s to have one people remember.

What’s Next?

You’ll start seeing new dishes arriving shortly, including heartier dinner entrées and a few ideas we’ve been developing behind the scenes. Some may become permanent Fish Hawk’s favorites. Others may evolve based on what you tell us.
